Fuel for Dancing Recipes | Tea Biscuits

Dancers at any level of ability can burn lots of calories and need healthy fuel that supports the hard work of both the mind and body in dance.

Today’s featured recipe is recommended by Ballet 5:8 Company Artist and Ballet 5:8 School of the Arts Instructor Sam Opsal (Mr. Sam).

From Mr. Sam:

This month of quarantine brings its fair share of challenges but it also brings some great opportunities for cooking that you might not normally have.

For instance, on a normal day the idea of afternoon tea with the family might seem impossible, but with new schedules and working from home maybe it is something fun to try. This simple biscuit recipe is relatively quick and easy. Our family would make these when I was growing up and I have fond memories making and eating them. They taste amazing with a little butter and honey!

Tea Biscuits

  • 2 1/2c. white flour  

  • 2 1/2 tsp baking powder  

  • 1/2 tsp baking soda

  • 2 pinches of salt

  • 12 tbsp cold butter, cut in small pieces

  • 12 tbsp milk or buttermilk

Instructions:

  1. Preheat your oven to 400 F. (200 C)

  2.  In a large bowl, combine the flour, baking powder, baking soda and salt.

  3.  Add the butter to the dry ingredients and, using a pastry blender or a fork, blend it in thoroughly until the mixture has the look of coarse crumbs.

  4. Add the milk and mix it in just until blended.

  5. Turn the dough out onto a lightly floured board. Flour your hands and pat out the dough until it is about ½ inch thick.

  6. Cut out biscuits with a floured biscuit cutter or I have used plastic cup.  (Do not twist the cutter.)  Place the biscuits about ½ inch apart on an ungreased baking sheet.

  7.  Bake the biscuits for 10-12 minutes, or until they are just golden-brown.  Butter the tops of the biscuits lightly as soon as they come out of the oven. Serve them hot, if possible, with butter and jam (or honey).
